OBJECTIVE

To follow up on the activities carried out in terms of equipment cleaning, monitoring of swabs for microbiological analysis, chemical control and follow-up of integrated pest management by the supplier of Sensient Flavors & Extracts Celaya Plant, as well as to guarantee the quality, legality and safety of the products manufactured.

ESSENTIAL DUTIES & RESPONSIBILITIES:

Quality and Safety Leader

Prerequisite compliance, Fraud and food defense; HACCP, as applicable.

BRC 

Implementation, maintenance and improvement of the processes required for food safety system.

Food Safety Culture 

Implement the Food Safety culture through training, specifications, in order to ensure the commitment of the areas involved and reduce potentially non-hazardous product and customer complaints.

HACCP

Evaluation of processes to control hazards and risk analysis.

Verification of GMPs in site

Verifying that coworkers follow and respect GMPs in the Plant and reporting incidents that occur during the shift in the logbook

Environmental preventive sanitation 

Environment sanitation according to the program; it is an ongoing activity, giving priority to Hygienic Zones

Zoning implementation & coordination and cross inspections

Carry out the review and validation of equipment cleaning procedures, Work together with the Microbiology and Operations area to detect possible risks of contamination to the product and/or process.

Cleaning

Daily cleaning of mats and placement of quaternary salts in QC, Warehouse, Maintenance areas and on hygienic zone operators

Verification of cleaning records

Reviewing of the correct filling out of cleaning records

Chemicals and cleaning materials control and their storage

Performing inventory of utensils and cleaning materials in use and in stock, as well as the storage of chemicals and materials in order to request materials on time. Perform mop change control.

Document control in Production area

Verify that Production is using the current and updated procedures and cleaning formats 

Weekly swabbing taking

Weekly swabbing taking: according to swabbing program. Follow-up to mop swabbing.

Chemical dredging of drainages and cleaning verification of drains

Chemical dredging of drains: according to weekly program. Verification of quaternary salt rings and verification of strainer cleaning

Verification of GMPs in site

Verifying that coworkers follow and respect GMPs in the Plant and reporting incidents that occur during the shift in the logbook

Verification of equipment cleaning

Verifying that coworkers follow and respect GMPs while cleaning equipment, as well as the correct use of cleaning equipment, cleaning sequences and concentration of chemicals; reporting incidents that occur during the shift in the logbook

Sluice maintenance

Verify that the mats with quaternary salts are clean, check the operation of soap dispensers, paper towel dispensers and sanitizing gel, sanitizer filling for shoe sprinklers, check that garbage is regularly removed 

Verification of the correct operation and dosage of Ecolab equipment

Check concentration of cleaning chemicals in dispensers, repair and calibration of Ecolab equipment (Mikro Spray and Control Towers)

TECHNICAL COMPETENCIES REQUIRED

  • Productive processes knowledge
  • Knowledge of the Allergen program 
  • Knowledge of the cleaning and sanitizing program     
  • Knowledge of the Chemicals Control program
  • Basic Management of the rule of three and conversions                                         
  • Knowledge and management of dangerous and non-dangerous 
  • reagents, toxic and flammable substances
  • Forklift handling                                                                       
  • Knowledge of Industrial Safety                                                           
  • Knowledge and handling of cleaning chemicals (Titration, advanced handling of  cleaning equipment, MSDS,  technical data sheets, recommended concentrations)
  • Knowledge and monitoring of GMPs                                                
  • Knowledge and management of Foreign Matter                                         
  • Knowledge and management of environmental monitoring                  
  • program and correct swabbing techniques
  • Management of Microsoft Office (Word, excel, power point) Basic
  • Control and updating of cleaning documents                                               
  • Supervision of services (cleaning, pest control, cleaning chemicals)

EDUCATION & EXPERIENCE:

  • Finished technical bachelor´s degree
  • Food Industry experience, minimum 5 year
  • Excel, Power Point, Word      
  • Intermediate English level
